Easy and nutritious dish for your Summer meals!
We certainly love Summer for many reasons, one of them being all the fresh Summer vegetables we can enjoy in our meals. Fresh tomatoes, zucchinis, eggplants, peppers, all of them make our meals delicious and very nutritious. So, today we are cooking chicken breasts with summer vegetables, a Mediterranean dish. Easy to make, yet so delicious!
- 650 gr chicken breasts
- 5-6 medium-sized potatoes
- 2 zucchinis
- 1 eggplant
- 4 ripe tomatoes
- 1 green pepper
- 1 onion
- 200 – 300 ml chicken stock
- Mix of herbs de Provence (oregano – rosemary – thyme – marjoram – basil)
- Olive oil
- Feta cheese for serving.
Preparation time: 20 minutes
Cook time: 1 hour
Preheat the oven at 220o C. Peel the potatoes and the zucchinis and slice them. Also slice the eggplant and mix them all together into a baking pan. Add salt.
Peel and cut into small pieces the onion and add it into the pan.
Peel the tomatoes and put them into a blender. Add the green pepper and blend them well, in order to become a tomato juice.
Cut the chicken breasts into small pieces and put them on top of the vegetables into the baking pan. Add salt.
Pour in the chicken stock (if you like your meal to be very juicy, add 300 ml of chicken stock, otherwise, if you prefer it dryer, add 200 ml).
Then add the tomato juice from the blender.
Pour olive oil on top and then the mix of herbs.
Bake at 220o C for about 1 hour.
Serve with feta cheese to make your dish more delicious! Take a piece of feta cheese and mash it using a fork, then add it on top of your serving.
