Chicken with potatoes and dried apricots

It’s one of my favorite dishes. It’s very easy to make and it is delicious! I have served it many times and my guests were amazed. You should definitely try it!

650 gr chicken breasts
1,6 kg potatoes
400 gr dried apricots
1 tub concentrated Knorr Homestyle chicken stock
400 ml water
1 apple
Salt / pepper / mustard powder / nutmeg / oregano
Olive oil

Preparation time: 20 minutes
Cook time: 1 hour

Preheat the oven at 220o C. Chop the chicken breasts into small pieces. Put them in a ball, add a little salt, a little mustard powder, a little oregano and mix them altogether.

Pill the potatoes and cut them into wedges. Put them in a baking pan and add some salt (not too much salt, since we will add chicken stock). Then pill the apple, cut it into wedges and put it also in the baking pan. Add the dried apricots and mix them all together. Add a little mustard powder, a little nutmeg (optional) and a little oregano.

Dissolve the concentrated chicken stock in 400 ml of water (use 300 ml hot water, dissolve the stock and then add 100 ml of water, so that it’s not too hot) and pour it in the baking pan.

Add the chicken pieces on top. Pour a little olive oil all over. Put the baking pan into the preheated oven and cook for about 1 hour.

Serve with a little grazed cheese (parmesan or any other hard cheese you like). Enjoy!
