Chicken with tomato sauce and raisin’s risotto

A delicious dish with a Mediterranean taste. You should definitely try it! It’s easy to make and it’s a very tasteful and healthy meal.CHICKEN TOMATO SAUCE 1

Ingredients (for 6-8 portions):
1 kg chicken breasts
1 big onion
2 red bell peppers
750 gr concentrated tomato juice
1 glass red wine
Olive oil
Salt / pepper / red sweet paprika
2 teaspoons dried oregano
2 laurel leaves

Preparation time: 40 minutes
Cook time: 25 minutes in pressure cooker

Cut the bell peppers in half and remove the insides. Put them into a blender and blend until the peppers become a smooth liquid.

Chop the chicken breasts into small pieces. Put a little olive oil into a cooking pot and saute the chicken pieces until the outside becomes white.

Add red wine, stir and remove from heat.

Peel and chop the onion into small pieces. Put it in the pressure cooker with some olive oil. Saute the onions.

Use a draining spoon and transfer the chicken pieces from their pot into the pressure cooker and stir with the onions.

Add the pepper smoothie and then the tomato juice. Stir well.

Add salt (about 2 teaspoons), a little pepper, a little red sweet paprika, 2 teaspoons dried oregano and 2 laurel leaves.

Close the pressure cooker and cook for 25 minutes.
You can serve with rice or pasta.

My favorite is the raisin’s risotto. Here is how you can make it.

Ingredients for the risotto:
3 teacups basmati rice
200 gr dried yellow raisins
6 teacups water (2 teacups of water per 1 teacup of rice)
1 teaspoon salt
Olive oil

Preparation time: 10 minutes
Cook time: 5 minutes boiling / 20 minutes leave aside

You boil the water. You put a little olive oil into a cooking pot and saute the rise (I always wash the rice with water before cooking) together with the raisins.

RISOTTO 1

Add the boiling water, the salt, stir well and reduce the heat. Put the lid on and crack it open a little. Cook for about 5-8 minutes, until most of the water (not all) is absorbed.

Then remove the pot from heat, remove the lid, cover the pot with a towel and then place the lid above it. Leave it aside for about 20 minutes.

The rice will absorb all water and will be ready for serving. CHICKEN TOMATO SAUCE 8

Serve with a little grazed cheese (parmesan or any other hard cheese you like). Enjoy!
