We usually eat strudels filled with apples for dessert. But I love the savoury strudels as a side dish. Also, it’s a great idea for brunch or as a party dish. They are easy to make and they are always a great hit! Here is an easy-peasy recipe!
Ingredients
650 gr puff pastry, separated in 2 sheets
4 red bell peppers
200 gr grated regato cheese
150 gr grated mozzarella cheese
3 eggs
100 ml fresh cream
Black Pepper / nutmeg
Preparation time: 20 minutes
Cook time: around 40 minutes
Preheat the oven at 200o C. Lay a baking sheet on a baking tray. Roll the first sheet of the pastry out. Make cuts down the sides of the sheet, so that you have 8 stipes on each side.
Chop the peppers in small cubical pieces. Mix the peppers with the cheese. Then beat 2 eggs (keep the third for brushing the strudel before baking), add the cream and add them together to your mix. Add a little black pepper and a little nutmeg. Mix them all together.
Put half of your mix in the middle of the pastry sheet. Then criss-cross the pastry stripes over the filling, sealing it inside. Repeat the same procedure for the second pastry sheet.
Beat the third egg and brush the strudels before putting them in the preheated oven.
Bake them at 200o C for about 40 minutes.
Take them out of the oven and leave them to cool for 10 minutes. Then cut them in large slices and serve them.
They are delicious even when they cool. You can also keep them in your fringe and reheat them the next day. It’s also a delicious take away lunch!
