Greek cuisine is full of delicious and healthy dishes. Greek pies play a huge role and they are made all over Greece, with many different recipes. We, Greeks, love traditional pies, that’s a fact! The recipes are passed down from generation to generation, from mother to daughter. My mother used to make pies all the time and now I make them. I eat them for breakfast or as a take-away lunch at the office.
So, let’s make a delicious Greek pie with leeks today!
Ingredients:
- 650 gr country style fillo pastry
- 1500 gr leeks
- 150 gr feta cheese
- 4 eggs
- 50 ml milk
- Olive oil
Preparation time: 30 minutes
Cook time: 1 hour
I used a fillo pastry with round shaped fillos and a round baking pan (28 cm diameter), but you can also use a rectangle shaped fillos and a rectangle pan (35 cm x 25 cm), whatever you like or whatever pastry you can find.
Wash the leeks well and cut them into small pieces. Put them in a pot with a little olive oil and saute until they become soft. Leave aside to cool.
Preheat the oven at 200o C. Brush the baking pan with olive oil and start laying the fillos, one by one, always brushing each one with olive oil.
Count your fillos and divide them in half. You are going to use half of them on the bottom of the pie and the rest on the top, to cover the mix.
Once you have laid half of the fillos into the pan, mash feta cheese using a fork, bit the eggs, add the milk and the mashed feta cheese and then mix them with the leeks.
Pour the mix into the pan with the laid fillos and spread evenly.
Take one fillo and lay it on top to cover the mix. Brush with olive oil.
Repeat with the rest of the fillos. Bend the edges of the bottom fillos towards the center of the pan, in between the top fillos, in order seal the edges.
Brush the top with olive oil and put the pie into the oven.
Bake for about 1 hour at 180o – 200o C, depending on your oven.
And here is a little tip: once the pie is baked, take it out of the oven and turn it upside down into a baking tray. Put it back in the oven for another 10 minutes. The pie will be better baked and it will be fluffier.
Once you take it out of the oven, let it cool for about 10 minutes and then cut it into pieces and serve it.

I like eating pies but very selective with the ingredients. I think from the ingredients alone, and having never eaten Greek pie, I must say, this works for me.

To be honest, I don’t think I’ve ever tasted Greek food before. Or pastry. But I admit that I’m tempted to try them out. Unfortunately, I don’t have a stove, so I can’t really cook here. But seriously, I am so eager to try this pie out! I’m really curious as to how it tastes like.
But what about the “fillos”? Do you have a recipe for that too? Or should I simply get whatever kind of puff?
You can use puff pastry instead of fillo pastry. Yes, I have a recipe for fillo pastry from my mother, but it is not so easy to make the fillos. You need a lot of practice in order to make them. My mother taught me when I was about 12 years old. I may write a post about how to make fillos. I should include many photos.
