Traditional Greek Pie with feta cheese

Feta cheese is the most popular and most consumed cheese in Greece. It’s a white cheese made mainly of sheep’s milk. It’s used in many Greek recipes and it is famous around the world. Fillo pies are also very popular in Greek cuisine and they have their roots in ancient Greece. So, here is a traditional Greek pie with feta cheese.

Ingredients:
– 650 gr country style fillo pastry
– 500 gr feta cheese
– 6 eggs
– 50 ml milk
– 100 gr grated hard yellow cheese (optional)
– Olive oil

Preparation time: 15 minutes
Cook time: 1 hour

Preheat the oven at 200o C. Brush a non-stick baking pan with olive oil (I used a 35 cm x 25 cm pan). Lay the first fillo in the baking pan and brush it with olive oil.GREEK PIE FETA CHEESE 3

Lay the second fillo on top of the first and also brush it with olive oil. Repeat with the third and fourth fillo. (The fillo pastry I used, had 8 fillos in total. So, I used half of them for the bottom of the pie and the rest for covering the pie. Count your fillos and divide them in half). GREEK PIE FETA CHEESE 4

Mash feta cheese in a bowl using a fork. (Feta cheese is very salty. If you want to make it milder, rinse it with running water before using, or put it in bowl, fill it with water, leave for 5 minutes, then drain.). Beat the eggs, add the milk and then add the mix into the feta cheese. Add grated yellow cheese, if you are using any, and stir well.GREEK PIE FETA CHEESE 5

Pour the mix into the pan, where you have laid the fillos. Spread evenly. Pour a little olive oil on top.GREEK PIE FETA CHEESE 6

Take one fillo and lay it on top to cover the mix. Brush with olive oil. Repeat with the rest of the fillos. Bend the edges of the bottom fillos towards the center of the pan, in between the top fillos, in order seal the edges.GREEK PIE FETA CHEESE 7

Brush the top with olive oil and put the pie into the oven. Bake for about 1 hour at 180o – 200o C, depending on your oven. GREEK PIE FETA CHEESE 8GREEK PIE FETA CHEESE 9

And here is a tip I learned from my mother: once the pie is baked, take it out of the oven and turn it upside down into a baking tray. Put it back in the oven for another 10 minutes. The pie will be better baked and it will be fluffier.

Once you take it out of the oven, let it cool for about 10 minutes and then cut it into pieces and serve it.GREEK PIE FETA CHEESE 10

Try serving the pie with a little honey on top, or with your favorite fruit marmalade, especially if you are serving it for breakfast or brunch. You can also make it as take away meal, or as a side dish. You can store it in your fridge and reheat it. It will be delicious even then!
